1 Large head fennel, trimmed

12 large red radishes, trimmed

5 stalks celery, (preferably with pale green leaves)

1 head frisee

3 heads white or red endive

1 large portobello mushroom, stemmed, gills removed

1/2 pound Manchego cheese

Roasted lemon vinaigrette (see recipe)

Salt and pepper to taste

1/2 cup chopped mixed fresh herbs, such as Italian parsley, tarragon and chervil (optional)
