1 x Acorn squash

2 tbsp Olive oil

4 cup Vegetable broth

1 x Onion - Diced

3-4 Cloves Garlic - minced

1/2 tsp Gluten free mild curry powder

1 pinch Nutmeg, freshly grated

1 1/2 cup Arborio Rice, uncooked

1 cup White Wine, replace with broth if alcohol free

1 pinch Sea salt and black pepper to taste

1 handful Pecans, parsley or cranberries for garnish
