1 pound dried borlotti (or cranberry beans)

1 yellow onion, quartered and peeled

1 garlic clove, smashed and peeled

1 bay leaf

1 sprig of thyme

2 teaspoons kosher salt

1 tablespoon extra virgin olive oil

1/4 pound pancetta, diced

3/4 pounds cipolline, peeled, ends trimmed

1 sprig of sage

1 tablespoon balsamic vinegar

1/4 cup flat leaf parsley, chopped

olive oil, to drizzle

sea salt, to sprinkle
