Ingredients for 4 servings

1 cup whole-milk ricotta cheese

2 large egg yolks

1 teaspoon finely grated lemon peel

1/4 teaspoon salt

1/8 teaspoon (generous) ground black pepper

1 3/4 cups all purpose flour

3 large egg yolks

6 tablespoons (or more) water

5 teaspoons olive oil

9 large eggs

6 tablespoons water

3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 12 pieces

1 tablespoon truffle oil*

3 small or 2 medium black truffles, very thinly sliced

*truffle oil can be found at some supermarkets, specialty foods stores, and Italian markets.
