Ingredients for 2 servings

3 tbsp rice vinegar

1 tbsp soy sauce

1 tsp brown sugar

1 tsp grated fresh ginger

8 oz . skinless boneless chicken breasts

1/2 medium peach

2 tbsp chopped red sweet pepper

2 tsp finely chopped red onion

2 tsp cilantro

1/2tsp lime juice

1/4tsp seeded jalapeno peppers

Preparation

In a plastic bag set in a deep bowl, combine rice vinegar, soy, brown sugar, and ginger

Add chicken and coat. Marinate 2-4hrs in fridge

Drain chicken and thread onto skewers

On charcoal grill directly on the rack over medium coals 5-7min

Meanwhile mix the peach, sweet pepper, onion, cilantro, lime juice and jalapeƱo in a small bowl for salsa
