1/4 cup all-purpose flour

1 medium onion , finely diced (about 1 cup)

fresh ground black pepper , to taste

1 bay leaf

1 lb penne rigate, dried

3/4 cup fresh breadcrumb

4 tablespoons unsalted butter

11 ounces monterey jack cheese , cut into 1/2 inch dice (about 2 cups)

1 tablespoon lemon zest , finely grated
