1/3 cup (75 ml) diced carrots

coriander leaves for garnish

1/3 cup (75 ml) diced red or sweet white onions

1 cup less 1 tbsp (225 ml) granulated sugar

3 to 6 bird-eye chilies , cut in half lengthwise or 1 tbsp (15 ml) roughly chopped finger chilies

1 tbsp (15 ml) lime or lemon juice

1 tbsp (15 ml) fish sauce

½ cup (125 ml) rice vinegar

8 cloves

½ tsp (2 ml) salt

2 cups (500 ml) diced seeded cucumbers

½ tsp (2 ml) black pepper corns

1 ½ (7 ml) tsp coriander seeds
