About 2 cups vegetable oil for frying

Chili Con Carne

4 slices bacon, diced

1 large yellow onion, chopped (about 2 cups)

1 1/2 tablespoons minced garlic (about 6 cloves)

2 carrots, diced

3 celery stalks, diced

3 pounds lean ground beef (coarse-ground preferred)

1 1/2 tablespoons chili powder

1 teaspoon ground cumin

1 tablespoon paprika

1 1/2 teaspoons hot red pepper flakes, or to taste

2 teaspoons dried oregano

1 teaspoon dried thyme

1 cup Syrah

1 (28-ounce) can tomato sauce

2 1/2 cups beef broth

Kosher salt and black pepper to taste


1 large onion, julienned

1/2 cup all-purpose flour

1 cup shredded cheddar cheese

1/4 cup thinly sliced green onion
