Ingredients for 4 servings

1 package chicken tenders

2 tbsps cornstarch

3 tbsps soy sauce

2 tbsps chicken stock

2 tbspsĀ  cornstarch

10 mini sweet peppers

1 bunch bok choy

1 bunch bright lights swiss chard

1 tbsp ginger

2 garlic clove

1/3 cup green onions

1 package basmati rice

2 tbsps sesame oil

2 tbsps sesame seeds

1 package sliced mushrooms

1 yellow onion

Preparation

1.

Toast sesame seeds in a dry pan. Set aside.

2.

Add sesame oil, ginger, onions and mushrooms. Cook until browned. Set aside.

3.

Cut chicken tenders into bite sized pieces, toss in corn starch, and fry lightly in medium heat pan with sesame oil.

4.

Cut bok choy and chard stalks only into bite size pieces. Add to the pan.

5.

Cut peppers into slices. Add to pan, add oil if needed, cover and cook 3 minutes. Then add mushrooms and onions.

6.

Combine soy sauce, broth and cornstarch with a whisk. Add to pan and turn up heat. Cook until sauce is absorbed.

7.

Toss with sliced green onions, sesame seeds and serve with cooked rice.
