1 cup kosher salt

1/2 cup brown sugar

1/2 gallon water

1 1/2 gallons heavily iced water

1 sweet onion, sliced

3 cloves garlic

4 Bay Leaves

1 tablespoon black peppercorns

1 tablespoon dried sage

1 tablespoon dried thyme

1 tablespoon dried rosemary

1 large bunch of fresh sage, the pre-packaged fresh herbs in the produce department are the perfect amount

1 large bunch of fresh thyme

1 large bunch of fresh rosemary

1 cup white wine

canola or peanut oil

4 tablespoons pan juices

4 tablespoons flour

4 cups turkey stock

turkey neck


1/2 onion

2 cloves garlic

1 teaspoon dried sage

1 teaspoon dried thyme

1 teaspoon dried rosemary

5 cups water
