1 12-inch sourdough bread (cut into half inch slices)
5 garlic cloves (minced)
7 roma tomatoes (diced)
1/2 cup parmesan cheese (grated)
1 tbsp extra-virgin olive oil
1 tsp balsamic vinegar
1/2 cup basil paste or fresh sliced
salt & pepper to taste
Preheat the oven to 350 degrees
Place the baguette slices on a baking tray. Drizzle with olive oil and Parmesan cheese. Place in oven for 20 minutes until cheese is melted.
Mix the tomatoes, minced garlic, basil, vinegar, olive oil, salt and pepper.
Remove baguette slices from the oven. Spread the garlic over each slice then top with the tomato mixture. Garnish with Parmesan.
