1 bunch watercress, blanched in salted water for 1 minute, then rinsed

2 tbsp mascarpone cheese

3.5-4 cup vegetable broth

2 tbsp butter

2 tbsp olive oil plus more to serve

1 twig thyme

1 x bay leaf

1 cup Carnaroli rice

1/4 cup dry white wine

1 large shallot, chopped finely

1 x celery branch, chopped finely

1 x fennel bulb, chopped finely

1 x tomato, diced

12 x scallops with coral

12 x large shrimp, deveined

1 tbsp chervil, chopped
