  • 3 plantains
  • oil for frying
  • salt
  • 6 plum-sized fresh tomatillos, husked and rinsed
  • 2 jalapeno peppers
  • 2 serrano peppers
  • 2 slices yellow onion, each about 1/2" thick
  • 1 whole head of roasted garlic
  • 1 fresh avocado
  • 2 sweet cherry peppers, or 1/2 cup of dice red bell pepper
  • nice handful of cilantro
  • 2-3 ripe plum tomatoes
  • juice of 2 limes
  • salt and pepper
