(Vegan) Summer Strawberry Spinach Salad

For salad mix:

1 pkg organic, pre-washed spinach

1-2 pkg organic strawberries, sliced

1/2 red onion, slivered

3 C walnuts

1/2 C raw or brown sugar

3/4 C maple syrup or agave

For dressing:

2 tsp finely minced garlic

1 Tbs Dijon mustard

1/2 C balsamic vinegar

1/4 C hot water

1 Tbs sugar

1 Tbs olive oil

Salt and pepper to taste



Prepare Salad: Prep: Preheat oven to 400 degrees F, rinse & slice strawberries, peel and sliver red onion. Place spinach, onions, and strawberries in serving bowl. While oven is preheating, prepare dressing (see below) and mix 1/2 C raw or brown sugar with 3/4 C maple syrup or agave. Pour this sweet glaze over the walnuts on a lined baking tray. Place in oven once preheated, for five minutes, checking every minute for color and texture. (You want it to be golden brown & slightly crispy) Once walnuts are done, take them out and sprinkle into serving bowl.


Prepare dressing: In a small bowl or food processor combine garlic and mustard until well mixed. Whisk in balsamic vinegar, hot water and sugar. Slowly add in olive oil mixing until emulsified. Add salt and pepper to taste. Use immediately or cover and refrigerate. Feel free to substitute different vinegars and seasoning to your own taste.


Pour dressing over salad mix. Toss. Enjoy
