1 medium white onion (about 8 ounces), halved and thinly sliced

2 x heaping tablespoons kosher or pickling salt

2 cup ice cubes

2 cup cider vinegar

1 cup white vinegar

2 1/4 cup sugar

2 tsp whole mustard seeds

3/4 tsp celery seed

3/4 tsp whole black peppercorns

1/4 tsp turmeric

1/2 tsp crushed red pepper flakes

1/8 tsp or a good pinch of ground cloves
