1 pinch of salt

1 1/2 cup puree of pumpkin or other flavorful squash*

1 cup (8 ounces) mascarpone (or substitute cream cheese)

3 eggs, separated

1/2 cup light brown sugar

1/2 teaspoon vanilla extract

A pinch each of nutmeg, cinnamon and dried ginger, or pumpkin pie spice, to taste

Whipped cream, to serve
