2 large butternut, buttercup or acorn squash

1/3 cup water

WILD-RICE STUFFING:

1 1/2 tablespoons nondiet tub-style margarine or butter

1 cup fresh bread crumbs

1 teaspoon dried thyme

2 cups sliced mushrooms

1/2 cup chopped onions

1/2 cup chopped celery

1 cup chopped sweet red peppers

2 cups cooked wild rice

1/2 cup reduced-sodium vegetable broth

1/2 cup nonfat sour cream

2 tablespoons grated Parmesan cheese

1 teaspoon no-salt herb blend
