8 slices bacon , fried crisp and drained

1 (1 lb) package baby spinach

1/2 cup catsup

1 avocado , peeled and thinly sliced

1/2 cup cider vinegar

1 (8 ounce) can water chestnuts , rinsed, drained, and sliced

1/4 cup sugar

For the salad

1 small red onion , thinly sliced and separated into rings

For the dressing

1 cup salad oil

1 1/2 cups fresh bean sprouts , washed and drained or 1 (16 ounce) can bean sprouts , rinsed and drained

2 teaspoons salt

1 1/2 cups fresh mushrooms , washed and sliced thin

1 (11 ounce) can mandarin orange segments , drained
