3 cloves garlic, smashed

1 medium yellow onion, chopped

pinch kosher salt

1 bay leaf

1 sprig fresh thyme

few sprigs fresh flat-leaf parsley

cheesecloth and string or spice bag to make spice bundle

8 to 10 pound Turkey Carcass

2 tablespoons apple cider vinegar (optional)

14 cups water

3 1/2 teaspoons kosher salt, divided

1/2 teaspoon fresh ground black pepper + more at end of cooking

3/4 cup uncooked pearled barley

2 stalks celery, cut into 1/2″ dice

2 to 3 carrots, cut into 1/4″ rounds
