1/4 cup apple cider vinegar

4 allspice berries

1/2 small jalapeno, seeded and julienned

1 large sweet apple (your choice)

1 pound Yukon Gold potatoes (about 4 medium)

2 large eggs

1 1/2 teaspoons kosher salt, or to taste

1/4 teaspoon freshly ground black pepper, or to taste

Butter, vegetable oil or duck fat for frying
