2.50 ml 1 small eggplant , peeled and 3/4 inch diced

1 x 1 teaspoon kosher salt

1 x 1 yellow bell pepper , 1 inch diced

0.23 kg 1/2 lb orzo pasta or rice-shaped pasta

0.23 kg 3/4 lb good feta , 1/2 inch diced (not crumbled)

7.50 ml 2 garlic cloves , minced

1 x 1 red bell pepper , 1 inch diced

1 x For the dressing

15 fresh basil leaves , cut into julienne
