4 whole teals

1 tbs unsalted butter

Salt and freshly cracked black pepper

3 banana shallots, finely diced

50 ml olive oil

1 tsp coriander seeds

5 black pepper corns

1 sprig of thyme

200 g pearl barley

Cooked leg meat from the teals

1 lemon, zest and juice

2 tbs golden linseed

2 tbs rapeseed oil

200 g damsons, stones removed

100 ml water

75 g caster sugar

20 ml sherry vinegar

100 ml rapeseed oil

1 tsp crushed coriander seeds
