• 1 bunch chives, sliced thin, about 1/2 cup
• 1 bay leaf
• 3 sprigs of thyme, tied together
• 3 Yukon Gold potatoes, about 1 lb, peeled and cut into 1-inch dice
• 2 tsps salt
• 1 qtwater
• 1/2 tsp pepper
