6 tofu hot dogs, cut into 1/2-inch chunks

2 tsp. mustard

1 1/2 cups unbleached all-purpose flour

1/2 cup fine yellow cornmeal

1 1/2 Tbs. sugar

1 1/2 tsp. baking powder

1/2 tsp. baking soda

4 Tbs. cold unsalted butter, cut into 1/4-inch pieces

3/4 cup buttermilk
