1/3 cup olive oil or bacon fat

1 large white onion or 2 medium yellow onions, finely diced

2 poblano peppers, finely diced

8 garlic cloves, chopped

2 Tablespoons tomato paste

2 teaspoons ground cumin

2 teaspoons chili powder

1/2 teaspoon salt

1 pound dried pinto beans, cooked per instructions above until very tender (about one hour)
