1 stick (4 ounces) unsalted butter, cut into tablespoons

4 large eggs, separated

2/3 cup sugar

1/8 teaspoon salt

1/8 teaspoon cream of tartar

Unsweetened cocoa powder and confectioners' sugar, for dusting
