4 sticks (1 pound) unsalted butter, softened slightly

1-1/3 cups sugar

1 teaspoon salt 3 large egg yolks

2 teaspoons vanilla

4-3/4 cups flour

In a large bowl cream together the butter, sugar and salt. Add the yolks and

vanilla, and beat until smooth. Add the flour gradually, beating on low

speed, until it is incorporated. Makes approximately 3 pounds of dough.

In the bowl of a food processor, blend the flour, sugar, butter (cut into small pieces), and salt until the mixture is crumbly. Add the yolks and vanilla, and blend the mixture, scraping the bowl occasionally, until it forms a
