2 x onions. peeled and thinly sliced

2 tbsp flour

4 x garlic cloves, peeled and thinly sliced

1 tbsp tomato paste

2 x anchovy fillets packed in oil (if in salt rinse off excess)

1 tsp cumin

2 tsp paprika

1 bottle red wine

1 cup water

2 sprigs thyme

1 x bay leaf

4 sprigs parsley

14 oz can of tomatoes (whole or diced)

10 large carrots, trimmed and sliced into 3 inch chunks

yogurt, sour cream or creme fraiche

chopped parsley
