  • 1/2 cup parmesan cheese , grated
  • 8 ozs artichoke hearts (in brine, drained)
  • 1/2 cup mild salsa (for serving)
  • 1/4 cup mild salsa
  • 1 garlic clove
  • 1/2 cup polenta
  • 1 egg white
  • 4 medium potatoes
  • 3 shallots , chopped
  • canola oil , for shallow frying
  • 2 Tbsps lemon juice
  • 1/4 cup olive oil
