4 large baking potatoes , (about 2 lb/1 kg)

2 cans (each 170 g) solid white tuna , drained

1/2 cup diced roasted or fresh sweet red peppers

1/4 cup sliced pitted black olives

1/4 cup light mayonnaise

1/4 cup light sour cream

1 stalk celery , diced

1/4 cup diced red onions

2 tbsp chopped fresh parsley

2 tbsp lemon juice

1/2 tsp salt

1/4 tsp pepper
