Ingredients for 4 servings

12 ounces (340 g) sirloin steak, thinly sliced across the grain, each piece about 2 inches long

2 medium bell peppers, green and red, sliced into thin strips, about 1/2-inch wide

3 or 4 scallions, cut into 1-inch pieces

2 tablespoons Chinese black bean sauce or fermented black beans (more or less to taste)

2 cloves garlic, minced

2 large slices ginger, minced

4 tablespoons canola or peanut oil

1/2 cup (120 ml) chicken or strong vegetable stock

1/2 teaspoon granulated sugar

2 teaspoons low sodium soy sauce

2 teaspoons Chinese rice wine or dry sherry

1-1/2 teaspoons cornstarch

1 tablespoon canola oil
