Ingredients for 4 servings

2 boneless skinless chicken breast halves (Leftover turkey also works well.)

1/2 medium onion , quartered

1 cup queso fresco or queso anejo (Mexican style cheese)

12 white corn tortillas (or up to 16)

1 cup lettuce , shredded

1 tablespoon chicken bouillon powder

2-3 garlic cloves

2-3 garlic cloves , halved

20 medium tomatillos

1/4 cup cilantro leaf (to garnish)

1 cup fresh cilantro leaves (one large bunch)

1/2 cup tomato , chopped

1/2 cup heavy cream (Mexican style is thicker than whipping cream) or creme fraiche or sour cream thinned with milk or cream

3 serrano chilies , seeds, stem and ribs removed (more if you want more heat)
