I make this but instead of the kidney beans, I use pinto beans and also I use beef stock instead of the chicken because I feel it gives the dish a much beefier taste.

This is my 11 year old's creation - she goes very easy of the spices so that other kids like it. I probably would do 10x (yes, 10) the amount of spices, but guaranteed no kids will say they don't like it this way.

Ingredients for 4 servings

onion

ground beef

kidney beans

black beans

corn

tomatoes

oregano

garlic powder

cumin

chicken broth

salt

pepper

cheddar cheese

avocado

sour cream

Preparation

1.

Sauté 1 pound ground beef and one onion

2.

Pour in 12 ounces of corn 6 ounces of kidney beans and 6 ounces of black beans

3.

At 28 ounces of canned chopped tomatoes

4.

Add one pinch of oregano leaves garlic powder, chili powder, and cumin

5.

Pour in one cup of chicken broth

6.

Bring to a boil then let simmer

7.

Add salt and pepper to taste

8.

Serve with cheddar cheese, sour cream and, avocado slices
