2 blood oranges

1 Ruby grapefruit or other pink grapefruit

1/4 small red onion, very thinly sliced

3 Tbs. fresh orange juice

3 Tbs. extra-virgin olive oil

Salt and freshly ground pepper, to taste

2 Tbs. coarsely chopped fresh mint
