1 1/2 cups dry white wine

1 1/2 cups white vinegar

1 1/2 cups water

3/4 cup sugar

2 sprigs dill +1 tablespoon chopped

2 tablespoons coarse salt

1 tablespoon coriander seeds

2 garlic cloves, halved lengthwise

1 dried red chile, such as ancho or pasilla (optional)

8 baby artichokes (or 2 large artichokes, trimmed and quartered)

1 pound carrots (about 6 medium), peeled and sliced 1/2-inch thick on the bias

1 bag (10 ounces) white pearl onions, peeled

8 ounces button mushrooms, cleaned and halved

1 red bell pepper, roasted and cut into 1-inch pieces
