1 whole onion
2 cups water
1 cube chicken bouillon
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp ground cumin
8 tbsps light brown sugar
1/2 tbsp salt
1/2 tbsp black pepper
4-5 lbs pork loin
Chop onion and add to slow cooker
Stir in water and chicken boullion cube
Add chili powder, ground cumin, brown sugar, salt, and pepper. Stir.
Place pork loin into slow-cooker, fat side down to coat lean side with spice mixture.
Flip pork loin fat side up and ladle spice mixture over top.
Place lid on slow-cooker and set to Low.
Slow-cook for 8 hours. The more you peek, the longer it takes! ;)
Shred pork with two forks and serve on a plate, on a bun, on a tortilla, or any way you want, along with any sauce you want.
