1 pound Andouille Sausage, sliced 1/2 inch thick

1 stalk celery, diced

1 green bell pepper, diced

1 tomato, diced

2 cloves garlic, minced

2 sprigs of thyme

1 bay leaf

1 quart chicken stock

1 teaspoon Worcestershire sauce

salt and pepper

tabasco sauce, according to your individual taste

rice, for serving

fried okra, for garnish

a baguette, for serving

1 pound okra, sliced in 1/2 inch rounds

1 cup buttermilk

1 cup cornmeal

1 cup flour

2 teaspoons Creole Spices

1 quart canola oil

sea or kosher salt

2 tablespoons celery salt

1 tablespoon sweet paprika

1 tablespoon coarse sea or kosher salt

1 tablespoon fresh ground black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

2 teaspoons cayenne pepper

1/2 teaspoon ground allspice
