  • 1/3 cup chicken or duck fat or canola oil
  • 1/3 cup flour
  • 1 onion, diced
  • 3 large boneless chicken breasts, diced
  • 1 Tbsp Creole Spices
  • 1 lb Andouille Sausage, sliced 1/2 inch thick
  • 1 stalk celery, diced
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 2 cloves garlic, minced
  • 2 sprigs of thyme
  • 1 bay leaf
  • 1 qtchicken stock
  • 1 tsp Worcestershire sauce
  • salt and pepper
  • tabasco sauce, according to your individual taste
  • rice, for serving
  • fried okra, for garnish
  • a baguette, for serving
  • 1 lb okra, sliced in 1/2 inch rounds
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tsps Creole Spices
  • 1 qtcanola oil
  • sea or kosher salt
  • 2 Tbsps celery salt
  • 1 Tbsp sweet paprika
  • 1 Tbsp coarse sea or kosher salt
  • 1 Tbsp fresh ground black pepper
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 2 tsps cayenne pepper
  • 1/2 tsp ground allspice
