Ingredients for 6 servings

4 cups Grated squash zucchini mix

5-6 scallions, finely chopped

1/2 tsp garlic powder

1/2 tsp sea salt

1/2 tsp coconut flour

Preparation

1.

Grate 4 cups of grated yellow squash and zucchini combined. Once squash is grated, put in cheesecloth or paper towels and squeeze out any moisture.

2.

In a bowl, add: 4 cups Grated squash zucchini mix Add 5-6 scallions, finely chopped 1/2 tsp garlic powder 1/2 tsp sea salt 1/2 tsp coconut flour Mix all ingredients together well.

3.

Take a ladle and scoop mixture into a muffin pan. Bake for 25-30 minutes until cooked through.
