1 2-3 pounds Potimarron, or Kuri pumpkin

1/2 small onion, cut into cubes

3 cup milk

3 tbsp crème fraîche

1 tbsp butter, soft

salt and pepper to taste

1 cup croutons (trim and cut stale bread into small cubes and sauté with a little butter until brown)

4 tbsp butter

3 x sage leafs
