Roasted Acorn Squash With Maple Syrup And Pecans

Ingredients for 4 servings

One medium sized acorn squash

2-3 tbsp Maple syrup

1 tsp sage

1/4-1/2 tsp cinnamon

salt to taste

chopped pecans

Preparation

Preheat oven to 375 degrees F. Halve the squash lengthwise and scrape out seeds. Then place the halves face-down on a greased, foil-lined baking sheet. Bake for 40-45 minutes.

Remove squash from the oven when very tender. Scrape with a fork to remove from the skin and place into a bowl. Add maple syrup, sage, cinnamon, and salt, and stir well. Top with pecans.
