Ingredients for 6 servings

2 tablespoons extra-virgin olive oil (EVOO)

2 canned anchovy fillets

1/4 pound pancetta, cut into cubes

1 large baking potato, peeled and chopped

2 carrots, peeled and grated

1 onion, chopped

3 - 4 cloves garlic, grated or finely chopped

2 - 3 sprigs fresh rosemary

1 bay leaf

2 teaspoons sweet smoked paprika or ground cumin

1 teaspoon crushed red pepper

1/2 teaspoon ground allspice

Salt and black pepper

1 1/2 cups dried lentils

2 32 ounce containers (2 quarts) chicken broth

1 14 1/2 ounce can fire-roasted diced tomatoes

1 bunch kale, stemmed and chopped (about 4 cups)

Crusty bread or rolls, for serving
