Ingredients for 16 servings

2¼ cups unbleached all-purpose flour

1 tablespoon ground cinnamon

½ cup shredded, sweetened coconut

1¼ cups sugar

1 large crisp apple , such as Fuji, Gala, or Granny Smith, peeled and grated (see Notes)

2 cups finely grated carrots (from about 6 carrots ; see Notes)

2 teaspoons baking soda

½ cup coarsely chopped pecans or walnuts

½ teaspoon salt

1 can (8 ounces) crushed pineapple , drained

¾ cup raisins

3 large eggs

Butter , for greasing the muffin cups (unless using cupcake liners)

1 teaspoon pure vanilla extract

1 cup canola oil
