2 medium onions peeled and finely chopped

2 cloves garlic peeled and finely chopped

400 g risotto rice

100 g taleggio cheese roughly chopped

sea salt and freshly ground black pepper

1 litre hot chicken stock

1 tablespoon olive oil

50 g freshly grated Parmesan cheese

3 sticks celery trimmed and finely chopped

100 g Appenzeller or Gruyere cheese roughly chopped
