Thyme-Infused Syrup, recipe follows

3 large eggs, separated

1 1/2 cups whole ricotta cheese

1 cup chopped pecans

1 tablespoon chopped fresh thyme leaves

1 1/2 tablespoons cornstarch

1/4 cup sour cream

1 cup sugar

20 fresh thyme sprigs

2 cups all-purpose flour

2 cups water, plus 1 teaspoon cold water, for slurry

1 cup whole milk

2 teaspoons grated lemon zest

1 teaspoon salt

1 1/2 teaspoons baking powder
