The spice rub:

1 teaspoon salt

1/2 teaspoon ground cumin

1 teaspoon oregano or thyme

1 to 3 teaspoons ground red chile (I love New Mexican Dixon chile)

1 teaspoon turbinado sugar (see Note)

Freshly ground black pepper

2 cloves garlic, minced

1 1/2 pounds skinless chicken breast tenders

1 tablespoon light olive oil

1/2 cup beer (do not use dark)

1 tablespoon adobo sauce from a can of chipotles en adobo

The tacos & toppings:

12 corn tortillas, crisp taco or tostada shells

2 cups grated cheddar cheese

3 cups sliced crisp romaine lettuce

-- Hot sauce such as Cholula or Tamazula brand

-- Homemade or purchased salsa

1 avocado, sliced
