This would make a good breakfast. I skipped the butter and breadcrumbs too cut down on saturated fat. This was good.

I love to change it up and enjoy sweet potatoes in a savory way. Gremolata is so delicious on virtually anything!

Ingredients for 4 servings

4 ounces pancetta, cubed

1 tablespoon olive oil

1 large sweet potato (about 1 pound) peeled and cut into 1-inch chunks

1⁄4 cup butter

1⁄3 cup bread crumbs

1 small bunch flat-leaf parsley, stems trimmed, finely chopped

Zest of 1 lemon, finely grated

Salt and freshly ground black pepper
