Ingredients for 4 servings

1  large onion

3 large carrots

3  celery stocks

3 cloves garlic

3 1/2 tbsps curry powder

1 cup french green lentils

1 14 0z can diced tomatoes

4 cups vegetable broth

1 tbsp fresh lemon juice

Preparation

1.

Cook diced up onion, add slices of carrot, celery and minced garlic and cook through

Add curry powder and mix

3.

Add lentils and coat with veggies

4.

Add tomatoes and let them cook for a few minutes to release the juices

5.

Add broth

6.

Add salt and pepper to season and lemon juice

7.

Bring to a boil, then cover and simmer for 30 min
