8 ripe medium-sized plantains, unpeeled, each cut in three pieces

4 egg yolks

4 whole large eggs

2 cups milk

2 tsp. salt

1/2 tsp. ground white pepper

1/2 tsp. ground nutmeg

1 cup heavy cream

1/2 cup grated mild cheese

2 Tbs. chopped fresh cilantro leaves

1 1/2 cups tomato sauce, optional

2 Tbs. vegetable oil

1 cup chopped onion

5 cloves garlic, chopped

2 lb. ripe tomatoes, peeled, seeded and diced

2 Tbs. combined dried herbs, or 4 Tbs. fresh herbs, such as basil, oregano or parsley

1/2 cup red wine

2 to 3 Tbs. olive oil

2 Tbs. tamari soy sauce, optional

1 Tbs. sugar

1/2 tsp. freshly ground black pepper

1/2 cup tomato paste

2 cups canned diced tomatoes with juice
