  • 1 can (8 ozs) pineapple chunks (packed in juice), drained, 1/3 cup juice reserved
  • 3 Tbsps extra virgin olive oil
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • Salad
  • 3/4 lb boneless, skinless chicken breast halves, grilled and cut into cubes
  • 1 1/2 cups cooked brown rice
  • 1 red bell pepper, chopped
  • 1/2 cup red onion, finely chopped
  • 4 large lettuce leaves
  • 2 Tbsps chopped pistachios
