2 firm-ripe Bosc pears

1 lime

4 boneless chicken half breasts, skin on

1 tablespoon corn oil or vegetable oil

Kosher salt and freshly ground pepper to taste

1 1/2 tablespoons minced shallots

6 to 8 thin slices of fresh ginger, bruised

3 garlic cloves, peeled and bruised

Zest of 1 1/2 oranges (large pieces of peel without the white pith)

2 tablespoons dry white wine

2 cups low-salt chicken broth or stock

1/2 cup orange juice

Orange segments from 2 sweet oranges

2 tablespoons unsalted butter

Chopped Italian parsley for garnish (optional)
